Real Housewife Bethenny Frankel's Spinach Ricotta Pasta recipe

Last week, Bravo premiered the long-awaited third season of The Real Housewives of New York City. We covered real housewife and natural food chef Bethenny Frankel’s diet tips, which she covers in greater detail in her healthy eating book “Naturally Thin: Unleash Your Skinny Girl and Free Yourself from a Lifetime of Dieting.” After watching last week’s episode and getting a sneak peek of Bethenny’s nude photoshoot for PETA, you know Bethenny in great shape and proud of it.

This week, in honor of the second episode of The Real Housewives of New York City and the two-part reunion special of The Real Housewives of Orange County, we want to give you a healthy, guilt-free recipe to eat while enjoying the show. Bethenny provides many natural food recipes on her website, but here at The Celebrity Workout we decided to taste-test a few and offer you one of our favorites.

  • 1 bag washed baby spinach
  • 1 lb. spinach linguine
  • 1 cup ricotta
  • 2 tbsp. chopped chives
  • Salt and pepper to taste
  • 2 cloves minced garlic
  • 1/2 cup freshly grated parmesan
  • 2 tbsp. toasted pine nuts
  • 2 tbsp. olive oil


  • Bring pot of salted water to boil.
  • Meanwhile, heat large nonstick pan over medium high heat and add spinach then garlic.
  • Saute until wilted and add salt and pepper.
  • Turn off heat.
  • When pasta is cooked, add to spinach with a small amount of pasta water (reserve some more of the pasta liquid for later).
  • Add remaining ingredients (except chives and pine nuts) and toss well.
  • Season with salt and pepper to taste.
  • Finish with fresh chives, pine nuts, and more grated parmesan.
