With Thanksgiving just days away, it is time to start planning your holiday menu. More and more celebrities are adopting diets free of poultry and red meat, and instead eating fish as a protein source. For example, Olivia Wilde of House fame calls herself a “sort of vegetarian who eats fish.” Bombshell Sofia Vergara from Modern Family quit eating red meat 16 years ago. Perhaps it is time to incorporate a fish option in your Thanksgiving menu.

In celebration of the American Music Awards and in honor of Alicia Keys’ two nominations, we bring you a special holiday recipe from Alicia’s table. With thirteen Grammys and five American Music Awards already under her belt, the musician has already enjoyed her share of accolades. We wish Alicia the best and hope you enjoy her Thanksgiving Maple-Soy Glazed Salmon recipe!

“It’s just so fun to listen to music and be in the kitchen all day creating this beautiful meal that everyone will eat together.” Alicia Keys told InStyle

Ingredients:
• 8 6 oz. salmon fillets
• 1 lemon, cut into wedges
• 4 tsp extra virgin olive oil
• 1/8 tsp nutmeg
• 1/8 tsp cinnamon
• 2 tbsp garlic powder
• ¾ tsp salt
• 1 tbsp onion powder
• 1/8 tsp black pepper
• ¼ cup soy sauce
• ½ cup grade-B maple syrup

Directions:
1 Rinse and dry salmon fillets; rub each with lemon wedge. Brush 2 tsp oil on the flesh side of salmon (to help seasoning adhere).

2 In bowl, mix nutmeg, cinnamon, garlic powder, salt, onion powder and black pepper. Sprinkle each fillet with spice mix; let sit covered in fridge for 1 hour.

3 Heat skillet and coat bottom with 2 tsp oil.

4 When oil is hot, place salmon in skillet, flesh side down, and cook over high heat for about 4 minutes or until brown. Turn over and cook for an additional 4 minutes.

5 In a saucepan, mix together soy sauce and maple syrup over medium heat until sauce is think enough to coat the back of a spoon (about 7 to 10 minutes).

6 Drizzle sauce over salmon fillets and serve.

Serves 8.
